Ingredients
2 cups heavy cream
1 cup unsweetened almond milk
1/2 cup erythritol or any other keto-friendly sweetener of your choice (adjust to taste)
1 tablespoon pure vanilla extract (or vanilla bean powder)
1/4 teaspoon xanthan gum (optional, for improved texture)
Pinch of salt
Directions
- In a blender, add the heavy cream, unsweetened almond milk, powdered erythritol, vanilla extract, and a pinch of salt.
- Blend on low speed to start incorporating the ingredients, then gradually increase the speed to medium-high. Blend until the mixture is smooth and all the ingredients are well combined.
- If you want a creamier texture, add the xanthan gum to the blender and blend again until fully incorporated. This step is optional but recommended for a smoother consistency.
- Pour the ice cream mixture into an ice cream maker and follow the manufacturer’s instructions for churning. If you don’t have an ice cream maker, transfer the mixture to a shallow container.
- If you’re using an ice cream maker, it will typically take around 20-30 minutes to reach a soft-serve consistency. If you’re using the freezer method, make sure to stir the mixture every 30 minutes until it reaches the desired consistency to prevent ice crystals from forming.
- Once the ice cream has reached your preferred consistency, transfer it to an airtight container and let it firm up in the freezer for a couple of hours before serving.
